Seasonal salads. Winter is winding down and the first spring greens are making their appearance. Learn to use winter and spring ingredients to prepare some of our favorite salads. Learn to make our secret “House Dressing,” which makes the simplest salad stand out.  Cost $35 per person

Cooking with cheese. Mac and cheese and grilled cheese are great, but cheese cookery can be so much more. You'll learn to make great cheese soups, cheese crisps, and some baked treats and ways to enjoy the cheese remnants that you find lurking in your refrigerator– the wonderfully named “fromage fort.”  Cost $35 per person


Allison Lakin fell in love with making cheese in 2002, and launched Lakin's Gorges Cheese in 2011. She makes fresh and aged cheese using organic cow's milk.

Farmer and chef Neal Foley, received culinary training in Europe, and has been teaching cooking for the past 15 years.

In October 2016, Lakin and Foley settled on a 1700s farm in Waldoboro, Maine, which they christened East Forty Farm and Dairy. This spring will see the creation of a brand new creamery to become the new home of Lakin's Gorges Cheese. Lakin's cheese is available at the farm store on OPEN days, alongside Foley's handcrafted wood products.

Sunday, December 11, 2016: East Forty Farm and Dairy, 1:00 - 3:00 pm.  Cheese Board Workshop. 
Join us in the Farmhouse Kitchen as we learn to assemble a cheese board from the bottom up.

In this tasting and pairing class, cheesemaker Allison Lakin of Lakin's Gorges Cheese will guide you through cheese selection and food pairing to assemble a cheese board for your holiday table. From fresh cheese to blue, we will learn some cheese science, hear some great stories, and taste some amazing cheese.

Then, Neal Foley of Foley's Custom Sawmill will teach you how to maintain a wooden cheese board. You will be able to choose from a selection of boards made from sustainably harvested wood and after conditioning the boards, get to take one home with you.

August 13, 2016: Cellardoor Villa, Rockport, ME, 2:00 - 4:00 p.m.   On Saturday, August 13th, from 2 PM to 4 PM, come to the Cellardoor Winery Villa at the corner of Route 1 and 90 in Rockport for delicious tastings of Lakin's Gorges ricotta, Opus 42 and Morgan cheeses, perfectly paired with outstanding Cellardoor Wines. Adding to the festivity, August 13th marks the 5th anniversary of Lakin's Gorges Cheese.

July 29 - August 1: American Cheese Society Conference, Providence RI.   Each year, ACS hosts the foremost educational conference and world-renowned cheese competition in North America. More than 1,000 professionals, purchasers, and influencers from throughout the United States, Canada, and Europe attend to network, sample products, and learn from industry experts. The Conference culminates in the Festival of Cheese, where competition cheeses are available for sampling alongside craft beer, wine, cider, and specialty foods.

The White Barn Inn invites you to join us on Sunday, April 19 at 10am for an amazing three hour cheesemaking class with Allison Lakin.
Allison is the owner and cheesemaker of Lakin’s Gorges Cheese, in Rockport Maine, a producer of small batch, fresh and aged hand-made cheese exclusively from organic milk. Guests will be given White Barn Inn aprons and work together to create FRESH MOZZARELLA AND RICOTTA right in our kitchen. Once finished, everyone will enjoy the fruits of their labor with a warm fresh baguette and a glass of specially paired wine. We will send you home with some Lakin’s Gorges Cheese as well. You can also combine the educational morning with special cheese-inspired prix fix menu offered at the White Barn Inn Bistro exclusively for the event that evening.

Cheese Tuesday at L'Espalier is a monthly celebration of food,wine, and cheese. It features a three course meal with matching wines, and of course a gigantic cheese tasting. 

The theme was "Soft and Gooey" featuring local wonders such as Medallion from Lakin's Gorges Cheese in Maine, and Harbison from Jasper Hill Farm in Vermont, as well as French classics such as Epoisses and Pont L'Eveque.

 Did you know that in Colombia it is traditional to add a white cheese (similar to Lakin's Gorges Ricotta) to hot chocolate?  The chocolate is whisked with a special wooden spoon called molinillo,  then the cheese is added to the mixture.

July 22, 2012: For over 15 years I have played an instrument known as the bones which are an ancient percussion instrument. I make my own bones from beef ribs and decorate them using the sailor's art of scrimshaw. Bones are one of the earliest documented instruments, appearing in Egyptian heiroglyphs.

The instrument moved from sea to shore in the mid 1800s, first becoming popular during the Minstrelsy period in the United States, then moving to Ireland and the Celtic cultures, where they became quite widespread as a percussion instrument.

This coming Sunday, July 22 at 2:00 p.m., I will teach a bones playing workshop at the Maine Celtic Celebration in Belfast, ME. It is a free festival with 2 stages of music, workshops, food and fun!

What a wonderful day Cathe Morrill (State of Maine Cheese Co. owner) and I had with all the visitors that came to see how cheese was made. We gave 9 tours to over 100 people.  So people could see the magic of ricotta, I made small batches for every tour.
